Baby, it’s cold outside! Our Team voted White Chicken Chili as a cold weather favorite. Quick, easy and hearty, it is a tasty family meal after a busy day with school and work:
WHITE CHICKEN CHILI
You will need
2 tablespoons olive oil
1 cup chopped onion
4 large garlic cloves, minced
1 pound skinless boneless chicken breasts or chicken tenderloins, washed and cubed
2 tablespoons chili powder
1 teaspoon ground cumin
2 cans (14.5 ounces each) diced tomatoes in juice
2 cans Great Northern beans (16 oz) drained and rinsed well
2 tsp. lime juice
1 cups frozen corn kernels, thawed, or fresh
Cook it up!
Heat olive oil in a large nonstick saucepan over medium-high heat. When oil is very hot, add onion and garlic; sauté until onion begins to brown. Add cubed chicken and brown on all sides; add spices, tomatoes and beans. Reduce heat and simmer for about 5 minutes; add lime juice and stir in the corn kernels.
Cover and simmer on low heat, stirring occasionally, for 15-20 minutes. Season with salt and pepper to taste.
Serve with sour cream, grated cheddar cheese and sliced jalapeno peppers on the side.
